Sooo yummy and easy to make. Take crushed up digestive biscuits, glacé cherries, marshmallows and any other sweet treats you may have lying around and bind with condensed milk. Leave to set in the fridge then slice up and enjoy; a great one for kid's parties. Crush the digestive biscuits in a food processor or in a plastic bag with a rolling pin, then put them in a large mixing bowl.

Fifteens are a popular sweet treat from Northern Ireland made with marshmallows, digestive biscuits (graham crackers in US), coconut and cherries. I grew up in Northern Ireland and these no-bake treats were a staple in the cake section of any cafe, alongside British classics like the Millionaire's shortbread and flapjacks. It was only on leaving to come to England did I realise that they don't exist. They are filled with pink and white marshmallows and glacé cherries, bound together by digestive biscuits and condensed milk, before being rolled in coconut - no baking required and super simple, just what I like!

Instructions to make Fifteens:
  1. Crush or blitz the digestives and put in big bowl. Add condensed milk then marshmallows and either cherries or chocolate. Mix well to ensure all ingredients well mixed with the milk in particular.
  2. Lay out cling film and spread coconut all along the base. Lift mix from bowl and arrange in a sausage-like shape. Pat your mixture into shape and coat sides and top with more coconut. Wrap cling film around tightly and tie at both ends. Allow to chill in fridge for few hours. Then unwrap and cut into (roughly) fifteen treats.
