- Prepare 300 g plant based sausages
- Take 2 tbs olive oil
- Make ready 1 1/2 tbs smoked paprika
- Prepare 1/2 tbs cayenne pepper
- Prepare 1/4 tbs ground fennel
- Get Pinch salt
- Make ready Pinch black pepper
- Get 2 garlic cloves
- Take 5 tbsp red wine/ or concentrated veggie stock
- Prepare 1/2 tbsp maple syrup

As it is pork, it's not vegan, but since it's all about the flavor that I am into, I figured let's figure out how to make a vegan version. This recipe produces quite a dense and spicy sausage. It can be eaten cold but it is better when fried off and added to other recipes, such as chorizo hash.
Steps to make Vegan chorizo:
- Slice the sausages into ~2cm thick pieces. Fry them in olive oil for 5mins until golden. Sprinkle over the paprika, cayenne pepper, fennel, salt and pepper.
- Peel and finely chopped the garlic, then add it to the pan. Fry for another 2mins. Add the wine and maple syrup to the pan and cook until the wine has reduced. Toss the sausages in the sticky glaze to ensure full coverage.
- Serve and enjoy
This recipe produces quite a dense and spicy sausage. It can be eaten cold but it is better when fried off and added to other recipes, such as chorizo hash. You can play with the spicing to create all kinds of flavours if you want to. For vegan chorizo, in a food processor combine the cooled mushrooms, the chickpeas, and walnuts; pulse until ingredients are chopped. Add chickpea mixture to spice mixture in the bowl.
