This has corn, kidney beans, tri colour capsicum, spring onion, onion, tomato, cabbage, nachos and cheese. This is a very colourful instant snack. I have used the most basic ingredients usually used in the Mexican cuisine and added a few more ingredients for the Indian touch. I have used no oil to prepare this recipe and this is as low calorie as it can get.

Instructions to make Mexican bhel:
  1. For tortillas prepare little soft dough by mixing all purpose flour, wheat flour, salt, ajwain, oil and enough water. Rest for 10 minutes. Then make equal size balls from it and roll out rotis (3-4 tortillas should be done). Roast both sides on tawa till light brown spots appear.
  2. Now cut into diamond shape and deep fry in hot oil till golden brown and crisp at low flame. Tortilla chips are ready.
  3. For salsa mix all ingredients mentioned in ' for salsa '. Keep aside.
  4. Now in a mixing bowl take boiled rajma, boiled american corn kernels, capsicum, salt, red chili sauce, black pepper powder, and Mexican seasoning. If you don't have Mexican seasoning, add chilli flakes and oregano. Mix well.
  5. Now add prepared salsa and mix it. Add grated cheese. At the time of serving add tortilla chips and combine well.
  6. Tempting Mexican bhel is ready. Garnish with some grated cheese and Sev.

I have used the most basic ingredients usually used in the Mexican cuisine and added a few more ingredients for the Indian touch. I have used no oil to prepare this recipe and this is as low calorie as it can get. What I used - Mexican Salad is a great addition to your weekly menu with its rich combination of flavors from Mexican staples - beans, avocados/guacamole, tomatoes, cheese, and spices!
