When I first made Fried Nori, it was a part of Tempura dish. However, the Nori Tempura turned much crispier than I expected, and it brought back a memory of a childhood snack. I altered the Tempura Batter and added Katsuobushi (Bonito Flakes) to it. These 'Crispy Fried Nori' are so yummy and perfect for snacking or DRINKING!

The ingredients needed to make Crispy Fried Nori:
  1. Get 1/4 cup Plain Flour *You can use ‘Tempura’ Flour if you have it
  2. Prepare 1/4 teaspoon Salt
  3. Prepare Ground Chilli as required *optional
  4. Take 1/4 cup Cold Water
  5. Prepare 1 sachet (2.5 g) Katsuobushi (Bonito Flakes) *finely crumbed
  6. Make ready 1 & 1/2 sheets Nori
  7. Get Oil for frying

Do this very lightly, making sure the nori doesn't get soggy. Then sprinkle the sesame seeds on top with a little bit of flaky salt. In a food processor, combine fried shallots, fried garlic, fried red onions, teriyaki nori, and salt. Pulse mixture until it forms a medium-sized crumb, like fine panko crumbs.

Instructions to make Crispy Fried Nori:
  1. Mix Plain Flour, Salt and Water in a bowl. Add Katsuobushi and mix well. *Note: You may wish to add some Ground Chilli for spiciness.
  2. Cut a Nori sheet into 16 pieces. Each piece would be about 5cm. You would need about 1 & 1/2 sheets. Thinly coat coarse side of each piece with the batter and fry in a generous amount Oil in a frying pan over medium heat, the battered side down first.
  3. When it is crispy, turn over and cook Nori only side as well. Turn over again, and fry until both sides are totally crispy and the batter is nicely browned.
  4. Transfer to paper towel to drain the excess oil.

In a food processor, combine fried shallots, fried garlic, fried red onions, teriyaki nori, and salt. Pulse mixture until it forms a medium-sized crumb, like fine panko crumbs. Add lemon zest and pulse to combine. Combine water, salt, soy sauce, and wasabi in a small bowl. Take one strip of nori and brush the liquid over the entire sheet.
