But there's also a difference in the ratio of almonds to sugar as well as consistency. Almond paste is softer and is used in baked goods.

Marzipan sold in grocery stores in the US contains more sugar than almond paste which makes it sweeter. The texture/consistency of marzipan is also smoother and more pliable. German marzipan is less sweet and the quality is actually higher, the lower the sugar content is. This makes German marzipan similar to America's almond paste, I guess.

Steps to make Simple Marzipan (Almond Paste):
  1. Store-bought Almond Meals is sometimes too coarse for the Marzipan to use for decoration. Choose finely ground Almond Meal, OR grind or process until fine. If you use it as filling for cake or tart, it’s not the issue.
  2. Combine Almond Meal and Icing Sugar in a bowl.
  3. Add 2 tablespoons (OR slightly less) Milk and mix well, then knead until required texture is achieved. If it is too wet, add extra Almond Meal. If too dry, add a very small amount Milk. *Note: 1 tablespoon is 15ml.
  4. To make softer Marzipan, simply add more Milk.

German marzipan is less sweet and the quality is actually higher, the lower the sugar content is. This makes German marzipan similar to America's almond paste, I guess. Combine almond paste with corn syrup to start making your own marzipan. The corn syrup gives the marzipan a supple texture. Almond paste is darker in color and has a rough texture.
