Instructions to make Pickled Kohlerabi:
- Making Konbu-kelp stock water. Slice Kohlerabis and kelp in Julian. See pic 2. If you don’t have a kelp, water is fine.
- Mix all the ingredients in a container with lid. Keep it in the fridge for 30 minutes or until serving. Give it shake, occasionally.
Heat vinegars, water, sugar, and spice in a small saucepan and stir until sugar dissolves. Bring to a boil, then remove from heat; add kohlrabi. Layer kohlrabi, dill and garlic in jar, tamping down gently after each "cycle". Add additional water to cover vegetables. Pour a teaspoon of black peppercorns into each clean jar.
